Stuffed portobello mushrooms
- 4 portobello mushrooms
- 1 cup chopped spinach
- 1 large green bell pepper diced
- 1/4 cup diced celery
- 1 diced garlic Clove
- 1/2 onion diced
- 16 ounces ground sausage (no nitrates or nitrates added) or grassfed beef
- 1 tablespoon coconut oil
Clean mushroom caps. Place face down in oven for 10 min at 450.
Heat coconut oil, cook peppers, celery,onion and garlic . Then add sausage or grassfed beef cook completely. Once meat is done add spinach, mix and spoon into mushrooms, cook at 450 for 20min.
These are really yummy and filling also taste great when reheated for an on the go meal.
