BUNNY GOOD EGG SALAD

It’s the day after Easter and the question is...What do we do with all these colored hard-boiled eggs??? Well, here’s a super good recipe that can help you make a dent in your boiled egg collection.
 

PALEO AVOCADO EGG SALAD RECIPE 

4 Adult Servings
 

INGREDIENTS

  • 2 avocados, chopped
  • 6 hard-boiled eggs, chopped
  • ¾ to 1 cup grape tomatoes, cut in quarters
  • 5 to 6 strips of bacon, cooked until crispy
  • ½ onion, diced
  • 2 tsp ground garlic
  • salt and pepper to taste

 

PREPARATION STEPS
  1. Prepare all ingredients

  2. In a medium bowl, combine eggs, avocado, garlic, salt and pepper. Stir until combined.

  3. Crumble pieces of bacon and add to the bowl.

  4. Add onions and tomatoes. Mix well.

  5. Taste and add additional salt, pepper or ground garlic if needed!
